After thinning, the spinach has room to grow

When the plants have reached about 3 inches in height, I harvest every other one for baby spinach to add to salad.

The remaining plants are then left to grow to maturity.

Plant breeders have not overlooked the needs of large commercial growers, either. One variety of carrots is distinguished by leaves that are firmly attached to the roots, which facilitates mechanical harvesting. Read through a large seed catalog and you will be astonished at the number of ways in which plant genetics has been tweaked for the benefit of humans.

Note that crop varieties created via hybridization are not “genetically modified organisms,” or GMOs. Genetic modification involves literally manipulating the plant’s genetic material in the laboratory, sometimes by adding DNA from unrelated plants, or even other organisms. Seeds of GMO crops are not sold to home gardeners; they are only available to commercial growers who contract with the seed company. Any concerns you might have about GMO technology and homegrown crops are unfounded. Transplants from your local garden center or big-box store do not include GMO varieties, either.
